I have to ask for forgiveness from my readers for how long it has been since I last posted. I’m pretty sure that this has been the longest time between posts since early this year when I was working on Quintessential Quinoa. I wish I could say that it is because I have been hard at work on some other great project, but sadly this is not the case. A little over a week ago my computer crashed. Many of you have heard me say that my computer has crashed before. These times, however, it went off to my husbands office where he reformatted the hard drive and I was back up and working in about 24 hours. This time….not so much. It was gone to computer heaven with both the motherboard and laptop screen beyond repair.
The good news? I FINALLY got a new computer…and its amazing. My old computer was five years old and constantly had problems. I couldn’t run programs like Photoshop on it without crashing the computer completely. Now I have no more excuses! Yikes – I may have to finally start editing my photos…after I learn Photoshop.

Anyhow, when I last posted I promised some easy quinoa recipes that would be perfect for this time of year. These Asian quinoa wraps are not only easy to put together – they are also surprisingly delicious. (And I’m not even fond of Asian flavors as a general rule!)

I made them with arugula and I really liked the peppery flavor, but next time I make them I will probably add sprouts to the mixture. (I recently picked up a simple Sprouting Jar and have been making sprouts a couple of times a week.) I am also going to try to cut back on the Vegenaise and maybe try a little more vinegar – this for no other reason than to cut back on the fat.
I only had small wraps on hand when I made these but larger ones would have been much better, so I adjusted the recipe to call for 10 inch wraps. Of course, whatever you have on hand will work just fine!
