Gluten Free Recipes

Although to date I don’t have a ton of gluten free recipes on the website, this is definitely a category you should keep an eye on. I first started experimenting with eating gluten free this month (March 2012), after reading the book Wheat Belly. After two weeks, I have no plans to reintroduce wheat into my diet which means a lot more gluten free recipes to come!

Roasted Cauliflower & Quinoa with Lemon Tahini Sauce

Thumbnail image for Roasted Cauliflower & Quinoa with Lemon Tahini Sauce

When I was growing up, cauliflower was merely a vehicle for lots of ranch dressing.  I never really wanted to eat it but  you had to have something to dip into your ranch. I’ll never forget my first encounter with roasted cauliflower. I was in my early 30′s, engaged and we had been invited over [...]

Spinach Artichoke Quinoa Casserole

Thumbnail image for Spinach Artichoke Quinoa Casserole

It goes without saying that the last (almost) six weeks have been chaotic for our family. I’m not sure anything can prepare you for the sleep deprivation and fatigue that comes along with the blessing of a new baby. Even having done it twice before. It’s kinda like child birth. The memory of how hard [...]

Broccoli Quinoa Salad

Thumbnail image for Broccoli Quinoa Salad

This time of year, I can’t get enough of salads. It makes sense.  The weather is warmer and eating lighter is natural.  Produce gets a little cheaper and better looking.  And of course, there is the ever looming swimsuit season.  (Which this new mama isn’t going to think about this year.) If you happen to [...]

Spicy Sausage Quinoa Polenta Bake

In my book, casseroles are one of God’s gifts to mom’s. Few things feel better than knowing that dinner is already made in the fridge or freezer. I love having the answer when hubby asks “Thoughts on dinner?”. I also love knowing that even though life is more than a little crazy right now we [...]

Oven Roasted Tomato, Black Bean & Quinoa Salad

You know the best thing about being an “old” mom of a new baby? Perspective. When the boys were little I declared myself “not a baby person”. Don’t get me wrong.  I loved being a mom from the beginning and have always been madly in love with my boys.   I just always knew that [...]

Veggie Quinoa Quesadillas

It is hard for me to believe that Skye is four weeks old today. I actually cried this morning at how fast it is all going. (Yeah, you should pity my husband. I’ve got hormones and I know how to use’em.)  While I look forward to the time when I can sleep again, I also [...]

Confetti Quinoa Salad

Thumbnail image for Confetti Quinoa Salad

The last 2 1/2 weeks have been surreal to say the least. I wasn’t expecting to go into labor when I did, because despite my best efforts with walking/acupressure/bouncing on my birthing ball/eating pineapple and eggplant I was showing no signs of progression.  As in not dilated, not soft…you get the idea.  So when my [...]

Blueberry Quinoa Muffins

Though I (obviously) cook a lot, there is nothing that makes me NOT want to cook more than hearing one of the boys say “Mom, I’m hungry!” It’s not that I don’t want to cook for them, mind you.  It’s just that  high pressure “Is it done yet?” cooking isn’t my idea of fun. Since [...]

Mexican Style Quinoa

Thumbnail image for Mexican Style Quinoa

Although I love complicated flavor profiles,  every mom needs a few basic dishes in their arsenal. Last week I mentioned that because of the arsenic in rice issue that I was converting most of my rice dishes to quinoa. We already eat a lot of quinoa around our house (I’m sure that is shocking), but [...]

Java Quinoa Smoothie

I’ve always liked smoothies, but over the last 9 months I’ve grown to love them for their simplicity. They are the perfect meal that keeps me away from processed and packaged foods. Like a lot of you, I am a huge fan of green smoothies that make the rest of my family run for cover. [...]

Quinoa Crusted Eggplant Parmesan Bites

Thumbnail image for Quinoa Crusted Eggplant Parmesan Bites

According to old wives tales, eggplant is one of those foods that can help bring on labor. I’m all for letting nature take its course, but my thinking is that if a little culinary pleasure can give nature a nudge then there is no harm in that. I wish I had some big news for [...]

Corn Fried Quinoa

In the last couple of weeks, my husband frequently blurts (Loudly. No matter where we are.) “Waddle, Waddle” when walking behind me. He thinks he’s been funny. I, on the other hand, think he should consider sleeping with one eye open. I’m never one for patience and now really isn’t a good time to be [...]

Black Bean Quinoa Spaghetti

Being a mom is such a funny thing. Here I talked briefly about how spoiled my boys are. I’m not proud of it but it’s true.  They are great kids but my husband really, really loves buying them stuff.  It often drives me crazy, but I’ve learned to stay out of it as best I [...]

Quinoa, Spinach & Sausage Breakfast Casserole

Thumbnail image for Quinoa, Spinach & Sausage Breakfast Casserole

Once upon a time, casseroles weren’t nearly as interesting to me as they are now. Not that I didn’t like them – because who doesn’t love a good casserole? I just didn’t realize that making foods ahead of time and having a stocked freezer could be so…life changing. The truth is that while I’d love [...]

Chocolate Chip Quinoa Energy Bars

I am officially panicked. Not because I’m nervous about childbirth.  (I’m naturally apprehensive, but I wouldn’t call it panicked.) And not because I’m not ready.  (Because I have everything and am as ready as I’m going to get.) My issue is that my Midwife is going out of town right after my due date and [...]

Sweet & Spicy Quinoa Salad

Thumbnail image for Sweet & Spicy Quinoa Salad

Normally in the contest between sweet and spicy, spicy always wins with me. These days, however, my taste buds are more than a little finicky.  Thanks to the pressure that baby is putting on my stomach, eating has become kind of…difficult.  For the foodie in me, this means I’ve got to make it count. I [...]
