<h3>I just love quinoa soup recipes and just when I though I&#8217;d made my last batch of soup for a while, the weather has decided to suprise me!</h3>
<p>Don&#8217;t you just love this time of year when you never know what to expect from the weather?  All weekend was beautiful and today I walk out and it is freezing outside!  Of course I&#8217;m in sandals and crop pants! <img src='http://cloudfront4.cookingquinoa.net/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </p>
<p>I had red beans soaking that I was going to make a Mexican dish with, but I decided to make soup instead.  Yep, more quinoa soup recipes!  (I think I&#8217;m on a roll!)  This soup was easy to put together, but whenever you are cooking beans in a soup it does take a while.  If you want to make this and you haven&#8217;t soaked your beans overnight you can use the quick soak method.  Just rinse the beans and add them to a large pot of water.  Bring to a boil and allow to boil for two minutes.  Turn the heat off and allow to sit covered for an hour.  Then, you are ready to proceed with the recipe!  (Anything you can do to make <a href="http://www.cookingquinoa.net/quinoa-recipes/">quinoa recipes</a> easier, right?)</p>

<h2 class="fn">Recipe: Creole Quinoa Soup</h2>
<p class="summary"><strong>Summary</strong>: <em>This soup was inspired by Clean Eating Magazine.  The original didn’t contain quinoa, and I like this version much better. The original recipe had sausage in it.  Being a vegetarian, I’ve left of the sausage, but I’m sure it would taste great.  Being me, I’ve substituted quinoa for rice and added in my own twist.</em></p>

<li class="ingredient">1 cup quinoa, rinsed</li>
<li class="ingredient">Olive oil spray (I use this one to avoid chemicals)</li>
<li class="ingredient">1 yellow onion, diced</li>
<li class="ingredient">1 green pepper, seeded and diced</li>
<li class="ingredient">6 cloves minced garlic</li>
<li class="ingredient">8 oz dried red beans (soaked overnight)</li>
<li class="ingredient">1 bay leaf</li>
<li class="ingredient">2 roma tomatoes, cored, seeded and chopped</li>
<li class="ingredient">1 ½ tsp Cajun seasoning</li>
<li class="ingredient">Salt and pepper</li>
<li class="ingredient">4 T fresh cilantro</li>
</ul>

<li>In a large pot bring water to boil.  Add quinoa and cook for 10 minutes.  Drain using a fine metal sieve or colander.  Rinse with cool water.  Bring 2-3 inches of water to a boil.  Place colander with quinoa in it over the water.  Cover with a clean kitchen towel and lid.  Steam for 10 minutes.</li>
<li>Heat a large pot over medium high heat.  Mist with olive oil.  Add in onion and green pepper.  Cook for 5 minutes.  Add in garlic and cook for another 30 seconds.  Drain soaked beans and rinse.  Add 3 cups of water, beans and bay leaf to the pot with the onion, pepper and garlic.  Boil for 20 minutes.  Reduce heat to medium low.  Cook for about 2 hours, or until beans are soft.  You may need to add more water.</li>
<li>When water has been reduced to less than one cup, add in tomatoes and cook an additional 10 minutes. Remove Bay leaf.   Stir in Cajun seasoning and quinoa.  Cook for 10 minutes.  Stir in cilantro and season with salt and pepper.</li>

<p>Most quinoa soup recipes, this one included, freeze very well.  Allow it to cool before freezing.  I always make extra and because of this I have a freezer full of quinoa soup recipes for those times when I just don&#8217;t feel like cooking.</p>

I&#8217;ve had the inspiration for this recipe torn out of a magazine for a while &#8211; so long that I don&#8217;t remember where I got it from.  I actually made quite a few changes to this recipe, because the first time that I made it it was a little bland for my taste.  The final result, however, is spicy enough to warm up the chillest of afternoons!</p>

<li class="ingredient">5 tomatoes cut in half</li>
<li class="ingredient">2 Anaheim chilies</li>
<li class="ingredient">2 jalapeno chilies</li>
<li class="ingredient">2 yellow onions, sliced into thick slices</li>
<li class="ingredient">6 cloves of garlic, halved</li>
<li class="ingredient">Olive oil spray</li>
<li class="ingredient">8 6 inch white corn tortillas, cut into strips</li>
<li class="ingredient">2 T fresh cilantro, chopped</li>
<li class="ingredient">2 tsp cumin</li>
<li class="ingredient">½ tsp sugar</li>
<li class="ingredient">½ tsp salt</li>
<li class="ingredient">½ tsp black pepper</li>
<li class="ingredient">1/8 tsp cayenne pepper (optional)</li>
<li class="ingredient">1 cup of quinoa, soaked for 30 minutes and rinsed</li>
<li class="ingredient">32 ounces vegetable broth</li>
<li class="ingredient">Avocado, diced</li>
<li class="ingredient">2 ounces queso fresco</li>
</ul>

<li>Preheat broiler and line a baking pan with foil.  Place halved tomatoes cut side down in pan.  Cut Anaheim chilies and jalapenos in half lengthwise.  Remove the seeds and membranes.  Arrange cut side down, flattening if necessary.  Broil for 15 minutes.</li>
<li> Remove from oven and allow to sit for another 15 minutes.  Peel and place in a bowl. Place onion and garlic in pan.  Cover the garlic with foil to prevent it from becoming black and hard.  Lightly coat onion with olive oil spray.  Broil for 20 minutes.</li>
<li>Arrange tortilla strips in a single layer.  Spray with olive oil.  Broil for 7-9 minutes, turning half way.  Be careful to watch carefully to avoid burning.  (Trust me, I didn’t and I set off the fire alarm the first time)</li>
<li>Place chilies, tomatoes, onions and garlic in a food process.</li>
<li> Blend for a minute or until smooth.  Move mixture to a pot and cook for two minutes over medium heat, stirring frequently.  Reduce the heat to low and cook another  7 minutes.  Stir in cilantro, spices, quinoa (uncooked) and vegetable broth.  Bring to boil.  Reduce the heat to medium low and simmer for 18-20 minutes until the quinoa is tender.  Serve with tortilla strips and top with avocado and cheese.</li>

<p>I must confess that I had never even tried lentils until I saw them in <a href="http://www.cleaneatingmag.com/">Clean Eating magazine</a> &#8211; which is where I got the inspiration for this lentil soup recipe.  At first lentils  seemed like a weird uber-healthy food that must taste bad.  (Kind of like I expected quinoa to be the first time I tried making <a href="http://www.cookingquinoa.net/quinoa-recipes/">quinoa recipes</a>&#8230;.LOL)  Once again, I was pleasantly surprised.  I actually really like lentils (and lentil soup) and have been trying to include them in my diet as often as I can!</p>
<p>Many of you who are super busy will love this easy lentil soup recipes.  And, if you are looking for a quinoa recipe easy enough for after a tough day at work, this is a great one to try.  Buy your onions, carrots and celery pre-chopped (or chop on the weekend) and used a jar of minced garlic.  Then, throw everything into the pot when its time and you can be off to enjoy a good book or a glass of wine and come back to a hearty and delicious lentil soup!  Best of all, there will be plenty left over for lunch or to freeze for another night.</p>
<p>Now, if you have never prepared lentils before, here are some things to keep in mind.</p>
<p><strong>Tips for Cooking Lentils</strong></p>
<ul>
<li>Lentils should be rinsed and picked over prior to cooking</li>
<li>Add in an onion, thyme or bay leaf to improve flavor.</li>
<li>Ladle off any white foam.  These are protein impurities.</li>
<li>Wait until the last 10 minutes to add in salt.  This gives it enough time to be absorbed but prevents the lentel from getting tough.</li>
<li>If you have used the onion, etc in cooking save it!  It is great as a vegetable broth.</li>
<li>Lentils will freeze for up to three months.</li>

<li class="ingredient">1 cup quinoa, soaked for 15 minutes and rinsed</li>
<li class="ingredient">12 cups vegetable broth</li>
<li class="ingredient">2 onions, chopped</li>
<li class="ingredient">4 carrots, chopped</li>
<li class="ingredient">1 cup celery, sliced thin</li>
<li class="ingredient">10 cloves garlic, minced</li>
<li class="ingredient">½ cup tomato sauce</li>
<li class="ingredient">2 T olive oil</li>
<li class="ingredient">1 T dried oregano</li>
<li class="ingredient">Mineral sea salt and fresh cracked black pepper</li>
<li class="ingredient">Juice of two lemons</li>
</ul>

<li>Place lentils and broth in a large pot and bring to a boil.  Reduce the heat to medium low and simmer for 30 minutes.</li>
<li> Add in quinoa, onions, carrots, celery, garlic, tomato sauce, olive oil, oregano, salt and pepper.  Cook for another 30 minutes or until lentils are tender.    Stir in lemon juice just before serving.</li>
<li>If desired, this soup can be frozen for up to three months.  Allow to cool first!</li>

			<content:encoded><![CDATA[<p></p><p>Don’t you love fall?  It always gets me in the mood to cook!  This week I’ve been working on developing more recipes for <a href="http://www.cookingquinoa.net">quinoa</a>!  I must admit that how much I like this <a href="http://www.cookingquinoa.net/quinoa-recipes/">quinoa recipe</a> really took me by surprise.  I am not the biggest soup eater, with the exception of my roasted garlic soup that I make every year for Thanksgiving and Christmas.  It really is not that I don’t enjoy soup but I just never got into the habit of making it.  Since I learned <a href="http://www.cookingquinoa.net/how-to-cook-quinoa-perfectly/">how to cook quinoa</a>, I can honestly count on my hands the number of times that I have made soup.  Well – now I’m hooked!</p>
<p>The inspiration for this recipe came from <a href="http://www.amazon.com/gp/product/1552859940?ie=UTF8&amp;tag=httpwwwfin075-20&amp;linkCode=as2&amp;camp=1789&amp;creative=390957&amp;creativeASIN=1552859940">Quinoa 365: The Everyday Superfood</a><img style="border: none !important; margin: 0px !important;" src="http://www.assoc-amazon.com/e/ir?t=httpwwwfin075-20&amp;l=as2&amp;o=1&amp;a=1552859940" border="0" alt="" width="1" height="1" /> which is without a doubt the best quinoa cookbook on the market.  I really only have two complaints with <a href="http://www.cookingquinoa.net/quinoa-365/">Quinoa 365</a>.    The first is that I think butter and cream are used in too many places where a healthier alternative could be substituted.  The second is that some of the recipes (but not all) can be a little too bland for my taste.  Still, the cookbook is loaded with recipes that you will never see a re-do of here because they are good just the way they are an d I would never print a quinoa recipe that was 100% someone else’s.  (Unless, of course I had permission.)</p>
<p>Anyways, the original recipe called for 3 tablespoons of butter and a cup of cream.  I just didn’t think that was necessary and I am happy to report that it was a big hit in my house.  I also added garlic,  (tomato soup without garlic?  It should be illegal J) and crushed red peppers to give it a little kick.</p>

<p><strong>Tomato and Roasted Red Pepper Quinoa Soup</strong></p>
<p><em>Ingredients</em></p>
<p>2 T olive oil</p>
<p>1 large onion, chopped</p>
<p>5 cloves garlic, minced</p>
<p>28 oz can crushed tomatoes</p>
<p>1 cup roasted red peppers, diced</p>
<p>¼ cup basil, finely chopped</p>
<p>2 tsp cane suger</p>
<p>½ tsp sea salt</p>
<p>½ tsp crushed red pepper</p>
<p>½ tsp fresh ground black pepper</p>
<p>2 cups vegetable stock</p>
<p>½ cup quinoa flour</p>
<p>½ cup milk</p>
<p>½ cup non-fat Greek yogurt</p>

<p>1.       Heat the olive oil over medium heat.  Sauté for 10 minutes or until the onion is tender.  Add the chopped garlic and sauté for a minute.  Add in tomatoes, roasted red peppers, basil, crushed red pepper, pepper, sugar and salt.</p>
<p>2.      In a medium bowl, wish together the vegetable stock and flour.  Add to the pan and bring to a boil.  Reduce heat and simmer for five minutes.</p>
<p>3.      Remove from heat and allow to cool slightly.  Puree in a blender or food processor.</p>
<p>4.      In a medium bowl, stir together the milk and yogurt.  Return the soup to the heat over low and add in the yogurt mixture.  Season to taste.</p>
<p>Now, while it may seem that I am being very good in removing the cream, I must admit that I still indulged a bet – but it was oh so worth it.  I served it with thinly sliced baguette rounds with goat cheese.  I placed them under the broiler so the cheese was nice and warm.  YUM!  Stay tuned for more recipes for quinoa!  I’m definitely going to be trying more <a href="http://www.cookingquinoa.net/quinoa-soup/">quinoa soup</a> recipes!</p>

<p style="text-align: justify;">I have always found that soup is a great way to help be control my diet.  Since it takes so long to eat if I have it before a meal I find that I eat so much less.  One of my favorite kinds of soup is <strong>minestrone soup</strong>.  It is both healthy and filling!  Turn it into <a href="http://www.cookingquinoa.net/quinoa-soup/"><strong>quinoa soup</strong></a> and you have got a real winner.  Between the quinoa and the beans, this dish is protein packed meaning that you don’t have to worry about getting hungry five minutes after you eat.  In fact, minestrone soup is one of the few soup recipes that I consider a meal in and of itself.</p>
<p style="text-align: justify;">While most minestrone soup recipes use canned beans, I like to make minestrone with dried cooked beans.  To do this you need to soak the beans in water over night in the refrigerator.  Drain and cover with fresh water.  Simmer uncovered for 45 – 55 minutes, adding salt in the last five minutes.</p>
<p style="text-align: justify;">You may have never tried a recipe for minestrone soup that has quinoa in it, but don’t let that scare you off.  This is a great recipe that also happens to be extremely healthy!  It’s another AMAZING way of cooking quinoa.</p>
<p style="text-align: justify;">If you want to cook the broth a bit longer to let the flavors combine, you can cook it for an hour and just add in the <a href="http://www.cookingquinoa.net/quinoa/">quinoa</a> in the last 20 minutes.  But, if you are pressed for time, this recipe is great as written.</p>

<p><strong>Minestrone Soup Recipe (aka Minestrone Quinoa Soup)</strong></p>
<p><strong>Ingredients</strong></p>
<p>2 T olive oil, best quality</p>
<p>1 cup of diced carrots</p>
<p>1 cup of diced fennel</p>
<p>1 cup of diced red onion</p>
<p>1 celery rib, diced</p>
<p>2 zucchini diced</p>
<p>4 cloves garlic, minced</p>
<p>2 bay leaves</p>
<p>2 tsp thyme, chopped</p>
<p>6 cups broth (chicken or vegetable)</p>
<p>1 ½ cups cannellini beans, cooked</p>
<p>2 cups seeded and diced plum tomatoes</p>
<p>½ cup quinoa, rinsed</p>
<p>Salt and pepper</p>
<p>1 cup spinach, fresh and finely chopped</p>
<p>2 T basil, sliced</p>
<p>½ cup Parmesan cheese, grated</p>
<p><strong>Directions</strong></p>
<ol>
<li> Heat olive oil in a heavy stock pot over medium heat.  Add carrots, fennel, onion, celery garlic, bay leaves and thyme and cook for 5 minutes.  Add zucchini and cook for an additional 4 minutes.</li>
<li>Add broth, beans, tomatoes and quinoa.  Increase the heat to bring to a boil.  Reduce to low and simmer for 20 minutes or until the quinoa is tender.</li>
<li>Remove bay leaves and sprinkle with salt and pepper.</li>
<li>Stir in spinach and basil just before serving.  Sprinkle with parmesan cheese.</li>

<p>I&#8217;ve always read business books that say that your success in business is largely determined by who you surround yourself with.  I&#8217;ve always tried to associate with people who wanted to go the same places I did or who where already there.  This is true not only in business, but in all areas of your life.</p>
<p>When I was in my late-20&#8242;s, I was without a doubt in the best shape of my life.   This was thanks, in large part, to my closest friend at the time, Robin.  She ate healthy and worked out like a fiend.  When I could think of a million reasons to avoid the gym, she was always there to drag me to another spinning class or push me through a grueling weight work out.  Through hanging out with her, I developed many of her great eating habits.  One thing that she ate religiously that wasn&#8217;t a part of my diet was soup!</p>
<p>Sure enough, when I added soup to my diet, controlling my weight got easier.  That&#8217;s why when I am looking to drop a few pounds, I always try to make quinoa soup part of my diet.</p>
<p>It&#8217;s been years since I&#8217;ve seen or heard from Robin, but I am still grateful for the times we shared and everything I learned from her.</p>
