Like quinoa, curry was not something that I grew up eating. Because my mother does not care for curry, I actually never ate it until I was grown and had left home. The first time I ever had curry was at an amazing (but sadly now defunct) casual restaurant and gourmet grocery store called Eatzi’s in Atlanta. One bite of curry chicken salad and I knew I what I’d been missing.
Old habits die hard and I must admit, in all my time of cooking quinoa, I have yet to try a curry dish until now. In fact, I don’t think that I’ve ever made anything with curry. This is a great cold quinoa salad! Give it a try!
Curried Quinoa Salad
Ingredients
1 cup quinoa, rinsed
6 green onions, chopped
1 green pepper, chopped
2 tbsp dried cranberries
¼ cup chopped walnuts
2 T fresh parsley, chopped
1/3 cup white wine vinegar
¼ cup extra virgin olive oil
½ T sugar
2 tsp curry powder
3 cloves garlic, minced
Directions
- Bring two cups of water to a boil and add quinoa. Boil for 10 minutes and drain in a fine metal colander.
- Bring another pot of water to a boil. Place colander over water, making sure that it does not touch the water. Cover with a clean dish cloth and a lid. Steam for 10 minutes and allow to cool.
- Combine green onions through parsley in a large bowl.
- Make dressing by combining the remaining ingredients. (vinegar thought garlic)
- Add quinoa to green onion mixture and toss with dressing.

OOOOOOMMMMMMMMMGGGGGGGGGGGGG!!!!!!!! This salad is sooooo yummy and I now almost dream about it. I didn:t have peppers but the curry mixed with the cranberries and waluts is so FABULOUS!!
