Quick question, How much does quinoa expand when cooked? What does one cup of uncooked quinoa turn into when cooked?

One cup of dry quinoa turns into three cups of cooked quinoa.

Hi Wendy, I found your site when I was googling for quinoa recipes. I was happy to find it ! as I so want to eat more of this “super food” I would like to know , before buying your book, how many of the recipes are gluten free AND vegan, as I am quite allergic to gluten, dairy, eggs, and I do not eat animals.

Kerry, There are some, but if you wait a few weeks I’m working on getting all of them. I am trying to eat vegan myself and my first project is working through the cookbook. Most recipes except desserts are GF.

Love the site! Found this recipe in a box of Ancient Harvest brand Inca Red Quinoa. Thought you might like to add it to your favorite breakfast recipes! Simple and delicious!

Quinoa Porridge

1/3 cup quinoa

1/4 cup pecans

2 cups water

1 tsp vanilla

1/4 tsp sea salt

dash of cinnamon (optional)

2 Tbsp maple syrup

Put quinoa into saucepan. Blend nuts with water on high for two minutes. Add nut mixture to pan with remaining ingredients. Bring to a boil then reduce heat to medium low. Simmer for 45 minutes.
