I've made this recipe now several times. We love it. My 3-year old loved it, too. I've made it with both white and red quinoa. Red is a little more firm, but both come out great. Love the flavor. So many friends lately have been diagnosed with wheat allergies. It's great to build up several wonderful things to serve them when they come to dinner.

To be on the safe side I'm doubling the recipe. This also makes my mother's week a lot easier since she loves quinoa and can now take it to work along with any other leftovers for lunch. I'll be sure to let you know what everyone thought of it though, I'm sure they'll love it!

Miranda - Another reader left me a comment that she thought it was more like 5-6 servings - so use your own judgment. My husband is 6'4"so obviously when dealing with vegetarian meals it takes more to fuel his caloric needs than it would someone who was 5"7'...

Thanks so much for letting me know. I'm sure it will be a hit. And yes I believe that to be on the safe side I should make a bit more. Thanks again for the advice and recipe!

Miranda, I am sorry I didn't get back to you - we had a database error and I was unable to access the admin side which allows me to respond to comments. When I am serving hungry adults with no other side dishes I usually use 1 cup of dry quinoa for four adults. For a party, you may want to have a bit more. It saves will in the refrigerator.

Hi, great looking recipe! I was actually pretty interested in it because I'm cooking for my mother's birthday dinner this year and since she loves goat cheese and quinoa it sounds perfect. To be sure I make enough though how many servings would you say that would make? Thanks!
