I am asking for forgiveness in advance for yet another recipe for quinoa patties, but in my defense these were really yummy and really different from any quinoa recipes  I’ve made.  They also held together really nice which was an added bonus.  One thing Ive learned about cooking quinoa patties and veggie burgers is that the key to them holding together is to make sure that a crust forms before you try to flip them.  And, if your mixture seems a little dry you can always use wet hands when your form your patties.

I made these last weekend and came up with the sauce on the fly.  It was surprisingly good.  I had sauce left over and used it on sandwiches – yummy!

Couscous and Quinoa Patties with Vegetable Yogurt Sauce

  • 3/4 cup water
  • 1/2 cup couscous
  • 1 1/4 cups cooked quinoa
  • 1/4 cups grated carrots
  • 1 onion, chopped
  • 1T chopped fresh dill
  • 1 T chopped fresh parsley
  • 4 cloves garlic, minced
  • 1 cup frozen peas, thawed
  • 3 eggs, lightly beaten (or 3 T flax seeds mixed with 9 T water)
  • 2 T whole wheat white flour
  • Olive oil for cooking
  • ¾ cup non fat Greek yogurt (or Veganaise)
  • 1 tablespoon finely shredded carrots
  • 1 tablespoon finely shredded onion
  • ½ roasted red pepper
  • 1 tablespoon fresh dill
  • 1 tablespoon fresh parsley
  • 4 cloves garlic, minced

  1. Bring water to boil in a small saucepan. Add in couscous and salt and pepper to taste. Cover and let sit for 5 minutes.
  2. Roughly mash peas in a large bowl and stir in carrots an onion. Mix in dill and parsley. Stir in couscous and quinoa until combined well. Add in eggs, flour and pepper.
  3. Using 1/3 cup measure form patties. Heat 2 tablespoons of olive oil over medium high heat. Cook patties for three minutes, flattening with the back of a spatula. Flip and cook for three more minutes. Repeat with remaining patties.
  4. Make sauce by combining yogurt, carrots, onion, roasted red pepper, dill, parsley and garlic in a food processor. Process until smooth.
