June just isn’t supposed to start off rainy and cold, but here I am.
It’s 58 degrees and I haven’t seen the sun all day. As a Florida girl, this is just unheard of! Oh, and the Chipmunks shredded one of the cushions to our outdoor chairs. Shredded. In the pouring rain. Who knew something so cute could be so destructive?
See if I let them on the deck to eat bird seed anymore.
Other than the bizzaro world I’m in today, I’m kinda excited that June is here.
For one, I’ll be participating in Oh She Glows June Salad Challenge. I’ve made the commitment to enjoy a salad (though not necessarily a quinoa salad!) every day. I’ll be sharing some of my quinoa salads and tweeting & Pinning using the hash tag #saladaday. You can check out my inspiration board here.
The biggest reason I’m doing this is because I’ve realized that I’ve let my produce consumption slide lately and it’s about time that I correct this. I’m actually really looking forward to trying some new salads because though I’m constantly coming up with new recipes, salads are one area were I get into a rut. So, if you have a favorite salad recipe….do share! And, I’d love for you to join me!
I’m also going to start working out again…..Errr Monday. Ok, tomorrow. I’ll do it tomorrow. (Will someone please hold me accountable????)
Moving on….
Today’s simple quinoa salad is less of an inspired recipe and more of the way I normally eat on a daily basis. It’s quick to put together and super healthy! You could easily add in beans, tempeh, or chick’n for a little extra protein but I made a lunch of it as is.
As far as dressings, a GOOD quality store bought will do just fine. Or, you can use my Chia Seed Balsamic Vinegar Dressing or my Asian Chia Seed Salad Dressing.

Ingredients
- 3 cups lettuce greens
- 1 ½ cups cooked quinoa
- 4 radishes, sliced thin and cut in strips
- 1 large or 2 small carrots, peeled and cut into matchsticks
- ½ red onion, sliced thin
- ½ red pepper, diced
- ¼ cup sunflower seeds, toasted
- Vinaigrette dressing of choice
Instructions
- Combine all ingredients in a large bowl. Toss with dressing of choice.
