Have you ever made a hummus recipe with tahini? A lot of  people have never heard of tahini and don’t know that it is an essential ingredient in most great hummus recipes.  In fact, I’d say that with most any hummus recipe tahini is part of what makes it so special.

Today my energy was feeling a little low after a busy weekend, so I decided to make a hummus recipe to give myself a little protein packed snack as a pick me up.   I decided to try a hummus recipe with tahini that I tore out from Vegetarian Times last fall, but never got around to trying.

Tips on making a great hummus recipe with tahini

Although I made some pretty significant modifications in the recipe – including adding quinoa for complete protein – I followed the general method which was different than anything I’ve made before.

How?

The increased blending time in my food processor yielded the smoothest hummus I’ve ever tasted outside of a Greek restaurant.

As always when making hummus recipes, I cooked my own garbanzo beans which I already had soaking for a recipe I’m working on for my cookbook.  Although I don’t always do this, I added a teaspoon of baking soda in the last 30 minutes of cooking.  This sacrifices a few nutrients but delivers a super-smooth texture.  Many people say it also helps with the gastrointestinal distress that can sometimes come with eating beans.

  • * 3 cups cooked chick peas (or 2 15 ounce cans)
  • * 1/4 cup lemon juice
  • * 1/3 cup water (or reserved liquid from chick peas)
  • * 6 cloves garlic, minced
  • * 1 cup cooked quinoa
  • * 1/3 cup tahini
  • * 1/2 tsp cayenne pepper
  1. # In a food processor, puree warm chick peas, lemon juice, garlic, water and quinoa for four minutes. Scrape down the sides of the bowl as necessary.
  2. # Add tahini and puree for two more minutes, adding additional water if necessary. Season to taste with salt and pepper. (I use 1 tsp of fine mineral sea salt)

Where can you buy tahinni?? I've looked somewhat but can't find it as I love hummus!!!
