Get Grilling with this Veggie Burger Recipe!

I don’t know about you, but when I think about July 4th, I always think about grilling! Now that I’m a vegetarian, I must say that I do a lot less outdoor grilling – but that doesn’t mean I don’t like a great veggie burger! I was really excited when I picked up the latest edition of Vegetarian Times and found a new vegetable burger recipe to try!  This one is a bit unique as it uses both pasta and quinoa to hold it together!  The suggested method of cooking is on a grill topper but I don’t have one so I just cooked them on a skillet and they came out just fine.

This recipe is a bit of work but they are  great to make ahead – I ended up making up the mixture and forming the patties in the morning and then cooking them later in the day.

I have to say it is definitely the prettiest veggie burger I’ve ever made.

Mediterranean Vegetable Burger Recipe

  • 4 oz rigatoni
  • 1/2 cup red or black quinoa, rinsed
  • 3/4 cup vegetable broth
  • Olive oil spray
  • 1 medium onion, chopped
  • 3 T minced garlic
  • 15 ounces white beans, drained and rinsed
  • 1/2 cup steamed broccoli
  • 1/4 cup shredded green cabbage
  • 1/2 red bell pepper, chopped
  • 2 T spicy barbecue sauce
  • 1/4 cup diced kalamata olives
  • 1/4 cup sun dried tomatoes, diced
  • 2 T walnut oil
  1. Cook rigatoni for 19 minutes, until very soft. Set aside.
  2. Bring quinoa and broth to a simmer. Reduce heat to low and cook covered for 18 minutes. It should still have a bite to it. Drain excess water if necessary.
  3. Spray a small skillet with olive oil spray. Add onion and cook for 8 minutes. Add garlic and cook one more minute.
  4. In to bowl of a blender or food processor, combine pasta and beans. Place in a large bowl and add quinoa, onion mixure, broccoli, green cabbage, red pepper, barbecue sauce, olives and sun dried tomatoes.
  5. Form into six patties. Brush with oil. Heat oil over medium heat and cook covered for 8 minutes.
  6. Flip and cook 6 more minutes
