Who doesn’t love a good pancake recipe! Pancakes are one of the last things that comes to mind when we talk about healthy eating. Today I thought I would share with you one of my recipes for quinoa pancakes. It is among the best healthy pancake recipe that I have ever tried. Most of you know that in the last few weeks, I’ve been doing a lot of experimenting with quinoa flour and quinoa flakes and I must say that the results have been pretty great. If you didn’t catch it, my banana bread recipe is a big hit in my house. Seriously – I think my (just turned) 5 year old could live on banana bread. My oldest – the pickiest eater in the house (AKA the commander) – doesn’t eat anything with banana’s but he does love pancakes! Both of my children are very thin, (Thanks to mean old mom’s food rules – I never want them to struggle with their weight like I have so I am trying to teach them healthy habits now.) but I still really try to limit their sugar consumption. Too much sugar first thing in the morning is a recipe for someone getting in trouble before lunch time! Have you ever tried homeschooling jacked up on sugar five and six year old boys? Yep, it’s not a pretty sight.
Now, we don’t have pancakes every day but I do like to indulge them once or twice a week. Because I’m so busy (aren’t we all?) I need an easy pancake recipe and this one fits the bill! I’ve eliminated the white sugar here and used agave nectar. And, of course theres the quinoa flour! I think you could experiment with the flours if you wanted and if you don’t want to buy agave nectar you could always just skip it or add in a couple of tablespoons of sugar.
Recipe: Pancake Recipe
Ingredients
- ½ cup quinoa flour
- ¼ cup all purpose flour
- ¼ cup whole wheat flour
- 2 T baking powder
- ¼ tsp salt
- 1 cup light coconut milk
- 1 T agave nectar
- 1 ½ T walnut oil (or olive)
- 1 egg
Instructions
- Combine together dry ingredients. In a separate boil combine coconut milk, agave nectar, oil and egg. Whisk until combined and then add in dry ingredients.
- Heat pan over medium heat and coat with cooking spray. Use about 2 ½ T of batter per pancake. Turn pancakes over when the tops start to have bubbles that press through. Cook two more minutes.
- Top with syrup and enjoy!
