Quinoa has long been a favorite of mine. Recently my family moved away from eating traditional grains and gluten so as you can imagine, Quinoa in all forms has become even more prominent for us now!
Today, I am going to share with you some of my family’s favorite ways to enjoy Quinoa.
As soon as the warm weather creeps in, one of my favorite things to do is make a big old salad and keep it in the fridge for an easy no-cook lunch or dinner or a quick, healthy snack.
Two standbys are this Quinoa Tabbouleh…
and this Red, White & Green Quinoa Salad.
Both of these Quinoa-based salads make multiple servings and keep really well in the fridge.
If it is a bit cooler and you are ready to have a warm Quinoa dish, this Mediterranean Quinoa with Caramelized Onions is a savory dinner loaded with olives, chickpeas, sun-dried tomatoes, herbs and spices.
Another favorite is my Quinoa Spanakopita, a new, healthy twist on an old classic flavor combo.
Sometimes you just want a delicious and easy side dish that will please everyone and this Toasted Garlic and Parsley Quinoa always delivers!
Last but not least is this quick Spiced Vegetable Soup with Quinoa. A happy accident loaded with vegetables, spices and of course, Quinoa that has been made over and over again and is a family favorite.
