Greek Red Quinoa Salad Recipe

If you are like me and love cooking quinoa, you are going to love this recipe. It is the perfect quinoa salad for summer time. Light and fresh, it is low on oil meaning you can enjoy it guilt free. One thing to remember is that since it has lettuce in it, you will want to toss it at the last minute. Unlike many other quinoa salad recipes, this one does not make ahead well. What I like to do is make the dressing early in the day and combine everything else except for the lettuce. Then, at the last minute, I simply toss the lettuce in and I am ready to go. Give it a try and see what you think!

Greek Red Quinoa Salad

Ingredients
1.5 Cups Red Wine Vinegar
1.5 Cups Balsamic Vinegar
2 T Extra Virgin Olive Oil
1 T fresh oregano, chopped
1 tsp garlic powder
¼ tsp salt
¼ tsp fresh ground pepper
6 cups chopped romaine lettuce
12 ounces cooked chopped chicken (optional)
2 cups cooked red quinoa quinoa
½ cup red onion, finely diced
½ cup black olives, sliced
½ cup feta cheese, crumbled

Directions:

Whisk vinegar, oil, oregano, garlic powder, salt and pepper in a large bowl or dressing mixer.
In a separate bowl, combine remaining ingredients. Toss and serve immediately.
