Happy New Year! If you are like me, one of your New Year’s resolutions is to get in great shape. I’ve lost some weight over the last couple of years, but the unfortunate reality is that I have much further to go. That means I’m going to be posting a lot of clean eating quinoa recipes as well as vegan quinoa recipes. (And in truth, its so easy to make most quinoa recipes vegan and typically they are healthier that way.)
I’ve also vowed that this is the year that I FINALLY get consistent with working out. I’ve tried joining gyms a couple of times and while I actually like working out, getting there is such a struggle. Even with great facilities like those at Lifetime Fitness, my boys just HATE to go stay at the day care so I end up feeling guilty the entire time I am working out. So, I decided to find a workout that I could do at home that would give me the results I’m looking for. My solution? P90x! I’m getting geared up now and starting with the P90x lean schedule. More on that later!
Anyways, I thought I would share with you are really easy vegan quinoa recipe that I made for lunch yesterday. I actually made it with a homemade marinara that I had on hand so the results were super yummy! I’ve substituted canned tomatoes with chiles because I’m trying to keep my promise of offering more easy quinoa recipes! J

Tex Mex Quinoa
Olive Oil Spray
2 shallots, chopped
4 cloves of garlic, minced
¼ tsp mineral sea salt
1 cup of quinoa, rinsed
½ cup diced tomatoes with chilies (canned)
¾ cup vegetable broth
¾ cup frozen corn, thawed
3 T cilantro
Directions
1. Heat pot over medium heat. Spray with olive oil and add shallots. Cook for 10 minutes or until tender, stirring often to prevent burning and sticking. Add garlic and cook for 30 seconds more.
2. Add quinoa and salt and cook for two minutes. Add vegatbale broth and tomatoes and bring to a boil.
3. Reduce the heat to low. Cover pot and simmer for 15 to 18 minutes or until the liquid is absorbed. Remove from heat and add corn and cilantro. Allow to sit covered for another five minutes. Fluff and enjoy!
