Today, I’ve got a great vegetarian sandwich for you.
I’ve been looking for healthy lunch ideas, and I think I may have a new obsession. This week, I successfully made quinoa sprouts for the first time.

I had tried to make them previously and it didn’t go so well, so I didn’t really have anything in mind for the sprouts once I had them. Then, I was thumbing through Power Foods, which had a number of vegetarian sandwiches and suddenly I knew exactly where those sprouts were going to end up!
When I first became a vegetarian, I kind of thought that sandwiches were a thing of the past.
This made me sad, because I love sandwiches.

Luckily, veggie sandwiches can be just as tasty as traditional sandwiches. For this vegetarian sandwich, I used whole wheat pita bread, but you could use any type of bread that you like. Obviously, if you are eating gluten free substitute your favorite gluten free bread.
If you are a vegan, just used vegan yogurt or if you plan ahead you can make a thicker Greek-like vegan yogurt by putting vegan yogurt in the same strainer you use to rinse quinoa and placing it over a bowl. Cover it and let it sit in the refrigerator overnight.
