I got really excited this morning when I logged into my Twitter account and saw that someone was doing Follow Friday. Friday? It’s Friday already?
My excitement stemmed from it was Friday I was close to making it through our first week of homeschooling with only a few tears. (Mine.)
Sadly, I was just as confused as this poor soul as to what day it was and it took me 20 minutes and a cup of coffee to finally realize it. At least I didn’t start sending Follow Friday’s out before the shocking revelation that it was actually Thursday.
(For those of you who haven’t yet jumped into the twitter world, Follow Friday is where you give a shout out to people that you follow that you think your followers should follow too. Confused yet? Welcome to the world of social media.)
Anyhow, I’m surviving and working on how to get it all done. Hopefully, by next week I will be back on top of things enough to get back to a regular posting schedule. I also hope to be ready to tell you about a new project I’m working on. Because, you know, what a homeschooling mom with a website who is writing two cookbooks really needs is another project. J
In the meantime, here is a great easy recipe that is part healthy dessert and part breakfast. Either way you decide to serve it, this Warm Quinoa Berry Bowl is delicious, satisfying and simple enough for those days when you have no idea what day it is.
- 1 1/2 tablespoons agave or coconut nectar (or other liquid sweetener)
- 2 teaspoons fresh grated ginger
- ¼ cup water
- 3 cups mixed berries
- 1 cup cooked quinoa
- For serving: yogurt (optional)
- In a skillet, combine coconut nectar, ginger and water. Bring to a boil and add berries, cook for about 3 minutes. Add quinoa and cook for 2 to 4 minutes more. Allow to cool slightly, and then divide between two serving bowls. If desired, top with yogurt.
